Monica is the founder and flavor genius behind Sorbae Frozen Treats—a business built from scratch, with intention in every detail and joy in every bite.

Her journey began with a single used gelato machine and a vision: to create frozen treats that felt just as good as they tasted—plant-based, allergy-conscious, and bursting with flavor. While still working full-time, Monica committed herself fully to bringing Sorbae to life, proving that dedication and heart can build something truly special.

Today, Sorbae has grown into a beloved brand with a brick-and-mortar shop right outside of downtown New Bedford (across the street from the pedestrian bridge to the Purchase Street Commuter Rail) and a mobile trailer that brings the treats to weddings, pop-ups, and events all over the Southcoast.

If you visit the shop, look closely and you’ll spot a photo taped to the side of the fridge—Monica as a toddler, pop in hand. It’s a quiet nod to the full-circle sweetness of her story.

Everything Monica makes is dairy-free, plant-based, and packed with flavor—designed for food lovers, people with allergies, and anyone who believes dessert should be both fun and inclusive. With seasonal menus and creative combinations, Sorbae has become known for frozen treats that surprise and delight.
